Radish and Goat Cheese Toasts
Serve these fresh and easy small bites at your next get together.
1 baguette, thinly sliced diagonally
Extra virgin olive oil
1 bunch radishes (any type), thinly sliced
4 to 6 ounces goat cheese
2 cups arugula
Salt and pepper to taste
Olive oil to taste
Red wine vinegar to taste
Heat oven to 400°F. Brush the bread with olive oil and place on a baking sheet. Bake 3 to 5 minutes, then turn and bake 3 to 5 minutes more until the bread is crispy but not too brown. Let cool to room temperature. In a bowl, drizzle olive oil, vinegar, salt and pepper on the arugula until they are lightly coated to your preferred taste. Coat each piece of toast with a little goat cheese. Top the goat cheese with a bit of arugula. Top the arugula with the sliced radishes. You might have leftover ingredients. Don’t put too much on the toasts, or they will be hard to eat.
